Dr. Itamar Yehuda is a senior faculty member in the Department of Nutrition Sciences at Tel-Hai Academic College and Head of Education R&D at the Shamir Research Institute. He holds a B.Sc. in Biotechnology from Tel-Hai Academic College and a direct Ph.D. in Nutritional Sciences from the Hebrew University of Jerusalem. His doctoral research focused on characterizing natural compounds with estrogen-like activity as potential alternatives for diabetic women. As a lecturer, he teaches courses in nutrition sciences and food sciences, including human nutrition, bioenergetics for nutritionists, and scientific writing.
Dr. Yehuda has extensive experience in the evaluation of educational and social programs and in leading research-based organizational change processes in educational settings. His work draws on a combination of qualitative and quantitative methodologies, including mixed-method approaches and design-based research. His core research interests include assessing the impact of pedagogical and organizational innovations, such as the implementation of new learning environments, on the development of higher-order thinking skills, metacognition, and students' social-emotional competencies. In addition, he conducts research on the role of nutrition interventions in promoting healthy lifestyles across diverse populations and the connections between malnutrition and well‑being in aging populations.
